Menu planning does a lot more than just keep my grocery budget in line, it prevents the 4pm refrigerator stare. We’ve all been there, right? You gaze into the depths of the produce bin waiting for something to jump into your arms shouting “Cook me! I’m delicious!” A few minutes of planning on Monday morning (and a reminder on my calendar to pull ingredients from the freezer) saves me a lot of time and frustration.
- Monday – 15 Bean Soup, garlic & cheddar biscuits (remember those from Red Lobster?), Winter Wilted Spinach Salad
- Tuesday – Chicken fajitas, refried beans, Spanish rice
- Wednesday – C.O.R.N.
- Thursday – Pot roast, rice and gravy,roasted turnips, rutabaga & Brussels sprouts
- Friday – Dilled salmon, baked sweet potatoes, peas & almonds
- Saturday – Pizza night – I think I’ll experiment w/ taco pizza
- Sunday – Sticky chicken, glazed carrots, collard greens & northern beans

So tell me, what’s for dinner?
Last week, I roasted two chickens and we enjoyed meals made with the leftovers all weekend. So easy! The first night was chicken, kale, and potato soup. Then, BBQ chicken pizza. And finally, chicken curry over rice last night. Now that all the chicken is gone, we'll just do a simple pasta dish tonight. I have no idea what the rest of the week holds, which is not how I like to start the week! Looks like I'll be going to the grocery store tomorrow…
I love planned overs. Last night as I was putting away the pork roast, I shredded some, stirred it in w/ the gravy, topped it with mashed potatoes and some cheddar. Today for lunch we had swineherder's pie. 😉 Sure it doesn't sound as nice as shepherd's pie, but it was still delicious.

Monday: Chicken marsala + whole grain spaghetti
Tuesday: Chili + cornbread
Wednesday: Meatball tagine + couscous
Thursday: Dinner at my parents' house
Friday: Leftovers
Saturday: Arroz con pollo
Sunday: Korean dinner at my parents' house

Now pardon me while I go do the refrigerator stare so I can figure out what to feed the kids tonight…
I am cooking early in the day for the family. The main meal will be served for lunch. The sitter will make sandwiches or a pizza while I enjoy oysters.
Sweet! Answering with my phone has finally decided to work! (It's the little things that make me happy)
Monday- hamburgers, white bean and escarole soup
Tuesday- fajitas, guacamole, refried pinto beans
Wednesday- pork tenderloin, potato gratin, steamed broccoli
Thursday- cream of cauliflower soup, grilled cheese, salad
Friday- Italian breaded chicken breasts, steamed green beans, pasta with parsley-lemon-wine-butter sauce
Saturday- BBQ spareribs, oven fried potatoes, spinach or greens (tbd), salad
Sunday- To be determined. Need to do a post-holiday inventory of the deep freezer this week. It will be something from the depths….
Monday: steak and baked potatoes
Tuesday: quiche
Wednesday: Bruschetta chicken with Italian red potatoes
Thursday: dinner with the inlaws or eating out
Friday: pork roast with dill red potatoes
As a side note, I got 2 5lb. bags of red potatoes at the store because they were buy 1 get 1 free. Is there a way to store red potatoes (or potatoes at all) so they don't go bad so quickly?
If you have a cool, dry place that's best. It's too bad root cellars aren't the norm any more. Potatoes fare best in the dark from 45 – 50F. That's really hard to pull off in my coastal climate. If you store potatoes in the refrigerator some of the starches convert to sugars, you can sort of undo the damage by letting them sit at room temperature (70ish) for a few days.
Vegetable bin in the fridge works the best for me. I have tried storing them in the garage in the dark in one of those potato bags, but they seem to sprout faster. Might also try using them up faster. Potato soup is pretty good this time of year, and you can freeze the leftovers.
I'm forever doing the 4 p.m. refrigerator stare–sometimes it starts earlier, like at 2 or 3, which is a little bit better. I have only planned to make chicken tonight and pork ribs tomorrow…not much of a menu. Speaking of pizza though, I am a big fan of barbecue chicken pizza.
hmmmmmm garlic & cheddar biscuits……. don't tempt me!! sounds sooo good!
Love those garlic and cheddar biscuits, I will make some when my oven functions. Which leaves me to my cooking dilemma for the week! No working oven. And I won't cook in the microwave, other than warming up leftovers, or making steamed veggies.
Monday: crockpot chicken
tuesday: Mac & cheese (stovetop)
Weds: order pizza (I work all day)
Thursday: Leftovers
friday: Pork chops in brown gravy
The weekend is up in the air, we will see if we have a working oven or not.
Monday – Waffles, pancakes and bacon.
Tuesday – Spaghetti and meatballs
Wednesday – Leftovers
Thursday – Grilled chicken and biscuits
Friday – Bacon and Potato soup with rolls
Saturday – Pizza
Sunday – Noodles and Ham
Now I just have to actually do all this. Having a plan is still much better than nothing at all.
My family loves my "speciality" Pizzas. I make taco with leftover refried beans, salsa, any leftover meat from Mexican food and cheese (light on the cheese); I do a Buffalo Chicken wing with bleu cheese dressing, hot sauce, chicken and motz cheese; I do a Philly Cheese steak with ranch dressing, meat, onion, peppers, mushrooms and cheese. The list goes on. Use your imagination and what is hanging around in your frig or freezer. Pizza is a great gather up the fragments meal.
Monday – penne w/shrimp & pesto, spinach salad
Tuesday – pulled pork, roasted brussels sprouts, mashed sweet potatoes
Wednesday – potluck at church
Thursday – chicken fajitas w/….?
Friday – chili
Saturday – meatloaf with potatoes & green beans
Sunday – don't know yet…
You inspired me with the fajitas…that's something we haven't done in a while. 🙂
I am trying to work more fish into our diet. For Christmas my father gave me an Italian cookbook, I can't wait to try out some of the seafood recipes.
Just seeing the words "dilled salmon" made me hungry for it! I may need to seek out some fresh salmon next week.
