Menu Monday 7/13

Heather says:

We’re back on the menu planning wagon, let’s see if we can work on the consumption end of the deal.

  • Monday – Charleston Chicken Salads using oven fried chicken fingers
  • Tuesday – Country-Style Cube Steak over rice with green beans and tossed salad*
  • Wednesday – Grilled pork chops with cracked pepper and blue cheese, grilled zucchini / tomatoes, and potatoes
  • Thursday – Blackened whiting over cheese grits with fresh fruit
  • Friday – C.O.R.N.**
  • Saturday- C.O.R.N.
  • Sunday  – Pulled pork, Boston baked beans, corn on the cob, broccoli salad.

*This is actually leftovers as I made this yesterday and it will be posted later today.
**Mr. Heather will be on his own these evenings. I’m taking a quick trip to MD and back. Wave if you see me on I-95.

  1. Well, our entire house is torn apart right now because we’re in the middle of a two-week floor finishing project. By “we” I mean literally, my husband, myself and my son…well, my son just walks around and gets into things, but you get the idea. Anyway, I’ve still been trying to make things here and there, even though the stove and oven are out on the porch and not hooked up. I was pretty proud of myself for managing some stir fry chicken and vegetables, some Indian chicken and rice another night–both on the Coleman camping stove. Tonight my biggest gamble, was making one of my favorite dishes, barbecue chicken pizza…in the toaster oven. It was not bad. Maybe not as good as in the oven, but still, very edible. As for this week to come, we’ll be homeless for a few days after tomorrow when the stain and polyurethane are applied, so I think we’ll be eating out or making sandwiches while staying with friends.

    • It’s an equal mix of iceberg and romaine (or greenleaf and romaine). Tossed with grapes, pecans, carrots, grape or cherry tomatoes, sprinkled with cheddar and served with honey mustard. It was really popular at Bennigans when I worked there, sometimes I have a taste for it.
