After travel and sickness, hopefully we’ll be getting back into a routine. Mr. Heather is having a lot of success with his diet, while great for him, it is frustrating for me. I’m not jealous of his success, I just don’t enjoy planning around the diet or having him not be a part of mealtime. I find it frustrating.
- Monday – grilled chicken and vegetable skewers, rice
- Tuesday – beef and vegetable stir fry, noodles
- Wednesday – corn chowder, grilled ham and cheese
- Thursday – CORN
- Friday – Creole catfish, roasted potatoes, green beans with onions
- Saturday – shrimp and grits, zucchini and mushrooms
- Sunday – BBQ chicken, pasta salad, grilled vegetables

Your meals sound so good. This week I will be inventing as I go… tonight it will be roast and mash potatoes, as of the rest of the week… IDK
We’ve got a well stocked refrig this week, so a few meals are repeats of last week (left-overs)
Monday- Potato/ham chowder, kale sauteed with garlic and bacon
Tuesday- Leftover hamburger/mushroom stroganoff over wide noodles, steamed green beans
Wednesday- (left over) Fresh polish sausage, sauerkraut, parsely buttered potatoes, pan sauteed apples
Thursday- Beer-butt chicken, grilled asparagus with lemon and olive oil, seasoned/grilled potato wedges
Friday- Fish Fry! Going out for dinner (traditional restuarant fare in WI)
Saturday- BBQ ribs with coffee/spice rub, home-made mac & cheese (casserole in freezer), veg. medley (cauliflower, broccoli, carrots, red pepper)
Here is the weekly menu around my neck of the woods. However, all must know that I reserve the right to totally freak out and forget to thaw out meat or I have the option to be too tired to make anything even remotely edible. In either case, pizza or cheap chinese food will appear.
Monday marinated baked chk, mashed pot, gravy, corn
Tuesday steak chimichangas w. rice
Wednesday Yakisoba Lo Mein w. rot. Chicken
Thursday moroccan chicken and olives w. french bread

I would love to have your creamy veggie soup recipe please. Due to a second bout with cancer I have to eat MORE veggies uhhhhh! Just when I thought I was eating enough. Any good main dish meals with lots of veggies would be greatly appreciated. Thank you so much!
I saw a disclaimer, on a menu plan, today, that added “due to meltdown.” I’m thinking that’s a good phrase for my menu’s too.
You need to share how to make Shrimp and Grits. I’ve only really seen it ordered, at meet-ups. It looks good, though. I think I only put shrimp in LC Boil.. so I need to learn to do something “new” with it, too.

Yum we had shrimp and grits Saturday.
Tonight is crab wellington and salad.
Tuesday is C.O.R.N
Wednesday homemade pimento cheese sandwiches and tomato soup.
Thursday Farfalle with Vodka sauce, garlic bread and salad
Friday-take out
Saturday- pizza night
Sunday- Dinner with inlaws
Tonight- jalapeno chicken sausage sandwiches and french fries
Wednesday- Chicken salad w/leftover chicken but we might be going to a Trail Blazers game so most likely stadium food
Thursday- Fish tacos
Friday- Flank steak, rice, and veggies
Saturday- Country Chicken Chowder
Sunday- Pizza
But when it really boils down to it who knows!
Can we come over your house for dinner? Your menu sounds yummy, we never know what the menu is until the day, so we just decide as to what we are having on the day I guess. I love everyone else menu, maybe we could come over to each one of you for the different days of the week! That would be soo awesome! LOL! 🙂
