Menu Monday 12/29

I can’t believe we are already closing out another year. I want to thank all of you who participate in our Menu Monday whether in the comments or on your own blogs. I am very excited about what the new year has in store for all of us. I am quite eager to reveal some big changes here at Home Ec 101, but for the moment a teaser is all you’ll get.

Monday – Beef stir fry, rice noodles
Tuesday – (Stepdaughter’s choice) Pot roast, corn, mashed potatoes, and gravy
Wednesday – Peel and eat shrimp, rice with tomato gravy, steamed vegetables
Thursday Hoppin’ John, cornbread, collards
Friday – C.O.R.N.
Saturday – Homemade pizza night
Sunday – Oven fried chicken, baked macaroni and cheese (can’t wait to share this recipe), green beans

  1. I can’t wait to compare your baked Mac-n-Cheese recipe with mine! ;o)

    I have a ton of leftover Christmas ham, so we’re going to be hamming it up for a while…ham-n-beans, ham omlette, ham salad…

  2. I too want to compare recipes. Baked mac & cheese is a top favorite here…and so simple. I’m not a fan of stove top mac..but I love the thickness of baked. You just reminded me of another way to rid ourselves of left over Christmas ham…

  3. A little behind the curve this week—

    Monday- Chicken noodle soup (from the leftover roast chicken, bones and roaster fond), salad, bread, fresh pineapple

    Tuesday- Split pea and ham soup (from the leftover ham and bones), salad, garlic bread.

    Wednesday- Big treat! Smoked salmon spread, assorted cheeses/sausages, fruit, crackers for appetizers. Grilled rib eye steaks, baked potatoes with all the fixin’s, sauteed mushrooms, sauteed sweet onions in butter, fresh spinach creamed with boursin and wine- of course!!. Happy New Year!

    Thursday- Spanish rice and beans with ham. Fresh pineapple (if any left!) Salads.

    Friday- (Hub’s birthday request) Chicken picatta with lemon/caper sauce, fresh linguine with light garlic butter, mushrooms/green bean combo, salad with his favorite favorite restaurant’s “house” dressing. (Going to try to reproduce it.) Hot, crusty rolls. White chocolate/macadamia nut and chocolate chip cookies.

    Saturday- Clean out the refrigerator day.

    Sunday- Homemade pizzas (on pita breads), salads, fruit.
