Menu Monday 9/8

This will probably make me sound like a crazy, obsessive compulsive and maybe I am, but I have missed menu planning over these past weeks.  Well, it isn’t the act of menu planning itself, but the net result. I like knowing what I need to have done before 5 o’clock rolls around and we are hungry and cranky.   Tell me, Home Eccers, what is on this week’s menu?

*Leftover meatloaf will be crumbled into the sauce.

***I’m intentionally making extra potatoes to freeze and use for breakfast skillets in the future.

  1. While I don’t plan my meals precisely day by day in advance, I do like to have a list of ideas at the ready.

  2. That’s remarkably similar to my menu for this week. Except that when I got to the store they had NO whole chickens. Nothing but family packs of leg quarters or skinless boneless breasts or thighs. Too bizarre. So then I went looking for black beans to make flautas to have tomorrow because I have an avocado that’s about to turn ripe, and the only black beans they had were the expensive organic ones… and two of the three cans on the shelves were dented.

    At least I already had the tilapia (I must have this recipe every couple of weeks or I go into withdrawal) and potatoes from my last trip to SuperTarget–which, sadly, is the best grocery store in town. I wish I still lived in a place that has a Wegman’s. Seriously, I wish that, like, every week.

  3. Monday – Harvest Kielbasa (easy, goes in slow-cooker, and it got a 5 star rating today!)

    Tuesday – Dirty Rice

    Wednesday – Sausage & sweet potatoes (slow-cooker again)

    Thursday- C.O.R.N.

    Friday – Barbecued chicken with veggies ( in slow-cooker)

    I found a wonderful cookbook recently – Lazy Day Cookin’. I’m trying out the recipes – If I can use the crock 4 nights out of 5, I will.

    It’s not laziness – it’s Efficiency. 😀
