I’ve decided to make Menu Monday a permanent fixture of Home Ec 101. Hopefully it will help inspire some readers to try something new.
- Monday – spaghetti and meatballs, tossed salad (The in-laws took us out for dinner on what would have been taco night. Consequently I have 3lbs of ground beef that must be used today. Whatever meatballs are not eaten tonight will be frozen for a quick meal in the future.)
- Tuesday – grilled ham and cheese sandwiches, devilled eggs, raw veggies
- Wednesday – split pea soup and biscuits
- Thursday – cheese enchiladas, refried beans, zucchini
- Friday – blackened fish (depends on what’s on sale) rice, steamed veggies
- Saturday – homemade pizzas, salad
- Sunday – roast pork tenderloin, mashed potatoes, green beans, and corn

“grilled ham and cheese sandwiches” – *That’s* what I’m going to do with the leftover ham! Doh! You ladies are geniuses.
Split pea soup is a comfort food for me. Sadly, my family is never comforted 🙂
Obviously they have no taste! Our other leftover ham option is cooking up a batch of navy beans in the pot liquor, served over rice with diced onion and warm cornbread. It’s “smack your granny good.”

OK – I am IMPRESSED! I don’t see one night of “leftovers”….
But Mama, there are two nights of “leftovers.” Tonight’s grilled ham and cheese and deviled eggs are both from Sunday’s meal.
Also tomorrow’s split pea soup will be from leftover ham.
I’ve found the trick is to just make them into “plannedovers.” I can’t stand food ruts, so they feel like new meals to me.
we usually have to do plannedovers as well, if leftovers arent eaten in te first 24 hours they need to become something else or go in the trash (unless its chili or lasagna that will be eaten for dayysss lol)
