Christmas and the end of 2008 are closing in fast. Here’s this week’s plan, but I won’t be disappointed if I dip into the freezer and pull out some chicken bog. However, I’m hoping to get a few more main dish recipes posted this week.
- Monday L/O Basic Italian Pork Chops and Linguini with clam sauce, steamed broccoli
- Tuesday Turkey cutlets with bell peppers, roasted potatoes, corn
- Wednesday Pan seared ribeye, baked sweet potatoes, pan roasted brussels sprouts
- Thursday Oven baked chicken chimichangas, refried beans, Spanish rice
- Friday Catfish with Cajun seasoning, cheese grits, green beans
- Saturday Spaghetti with ground chicken and sausage meatballs and marinara, tossed salad, garlic bread
- Sunday Albondigas, cheese quesadillas for the kids

Monday- hamburger stroganoff, buttered egg noodles, steamed carrots with light maple butter glaze., salad
Tues.- chicken picatta with lemon caper sauce, fresh linguine (a big treat!) with alfredo sauce and salad, steamed broccoli
Wed.- hamburger vegetable soup with hot cheese bread and salad
Thurs.- Clean out the fridge day
Fri.- Homade macaroni & cheese (with cooked, mashed winter squash added to mixture- very tasty and complimentary flavors), salad and steamed grean beans
Sat.- Cassoulet, warm french bread, salad, steamed asparagus
Sunday- spaghetti and meatballs, salad
Sunday- roast chicken, baked butternut squash, baked potatoes

CJ, can I eat at your house?
We had homemade mac and cheese, with a delicious pan cooked ham slice, and salad on Monday.
Tuesday night was a church Christmas dinner.
Wednesday is kielbasa stir fried with onion and apple slices over kluski noodles, with fresh apple salad and green beans.
Thursday is a bacon and baby spinach frittatta, with garlic bread and a salad.
Friday will be ham loaves (made by my church ladies and stored in the freezer) with mashed sweet potatoes and raw carrots/green peppers/cucumber.
Sounds yummy as I write it; maybe I won’t be over, CJ!
