Thanks to some lovely women this week’s meals will be taken care of Thursday through Sunday. I am having surgery on Wednesday and they are helping out so I can have a few days to recover.

Surgery. Oy vey.
On the menu: Less meat and eating out; More intentional living.
After a successful trial of turkey meatloaf, I’m going to try turkey tacos. I figure the seasoning will cover up the flavor enough that it’ll pass for beef. If the color is odd, I’ll probably add a bit of Kitchen Bouquet.
Ooooh, good luck on the surgery! Best wishes for a quick recovery. I hope you have lots of help, especially with the baby.
I am not doing a very good job w/ menu planning, but I am doing a good job of coming up with creative ways to use leftovers!
Yesterday we had a belated “Superbowl” party w/ my folks (I was sick for the real one, so the roast went in the freezer), in which I made this beef-and-bean roast thing to use as part of a chip dip. Brought home leftovers, so today will be chili made with the leftovers, some diced tomatoes, maybe corn, a little water and masa harina, and cumin. Yummy!
I’m proud of myself for working on my fly-by-the-seat-of-my-pants cooking skills. It’s always been either have a menu plan or go to Taco Bell, so learning to improvise is an exciting process and a valuable skill…
Hope the surgery goes quick & easy for you. Not too much in the menu-planning department here. I slow-baked some meatballs in sauce this weekend, so I guess it’s spaghetti & meatballs tonight. Tues and Wed will be whatever I’m in the mood to make. Thurs we have friends coming for dinner and I’m planning a creamy chicken-and-pasta dish with a salad for V-day. Fri we usually go out.
on the menu: inlaws are coming this weekend so i’m making a giant ham tomorrow so that there will be a plethora of pork based high sodium sandwich bits in the fridge for them just the way they like it. tonight i’m throwing the carcass from last nights rotisserie chicken in a pot and making soup. wednesday rice and beans, and then the rest of the week is up to them since they buy their own food anyhow.
Planning?
I usually cook meals during the week, but planning? I go to the refrigerator/freezer see wht meat or fish is available and make ameal based around that.
It usually works out to be quite a varied diet though.
Gosh, you’re not having a very fun month. I wish you a speedy recovery and am glad you have some great friends around!
I guess I’m with Eyebee on the meal planning thing. 🙂 I do more planning on weeks when my hubby is out of town; preparing meals and single-parenting is no fun, so some advanced thinking does help.
I just got done creatively using up everything edible in my fridge – we’re going away for a week of vacation. But we’ve had some straaaaange meals the last 2 days! (um, leftover stir fry with oven fries as dessert).

I hope all works out for you! This week was planned but I wound up with alot of left overs. I made 2 diffrent soups out of left over chicken and a carcass I cooked off from Sunday. My son brought home some roast beef ends from work {they throw them away} for shame for shame. I made 2 meals out of that, one veggie soup and surf and turf {bought scallops} for early valentines dinner. Now Im back to my menu that I started for Sunday and havent done anuthing on it yet. I love it when that happens!
My fiance and I tried butternut squash soup. We aren’t big vegetable eaters but it was suprisingly good and we paired it with homemade whole wheat/honey biscuits.
