Busy is a word we’re tired of hearing. How are you? Busy? Yep. My husband’s work schedule has gone insane -which lately we’re just thankful there is a work schedule- and my own? Well, I’m not sure anything else will fit without having to pencil in a three-day-stay in a quiet, padded room.
To keep myself in line and to stay out of the drive-through here’s this week’s plan, Friday and Saturday Tim will be on his own with the kids, I plan on making enough Wednesday and Thursday to see them through with minimal effort. Bold recipes are the ones I hope to post in the near future, the key word being hope:
- Monday – pan fried fish, rice and peas, green beans (frozen) -possibly coleslaw, but no promises-
- Tuesday – pork chops with raspberry sauce, sautéed cabbage, glazed carrots
- Wednesday – Chicken pilau, roasted broccoli
- Thursday – Kidney bean patty burgers, sweet potato oven fries, tossed salad
- Friday – C.O.R.N.
- Saturday – C.O.R.N.
- Sunday – roast chicken (unless it’s hot, then it will be grilled Spatchcock style), lentil pilaf, asparagus broiled or grilled or I may just be exhausted, in that case it will be Brinner – breakfast for dinner eggs, grits, bacon, and fruit
CORN = Clean Out Refrigerator Night

I have no clue this week. I sent my son to school with *cringe* a lunchable. In all fairness it's pizza, though I know he'll be starving once he gets home. I"m trying not to fill my freezer up, as we have cookie dough for a fundraiser coming in tomorrow. We'll eat whatever is in the house tonight, and probably tomorrow until everything gets delivered and out of my house.
Whatever you do, don’t be too hard on yourself. I’m certainly not going to lambaste you for it, I’d certainly be a hypocrite. I have no problem with convenience foods being used on occasion or as a stepping stone toward learning how to cook.
Last week, the kids had pizza way too often, partly due to poor planning for our trip to Myrtle and also due to a crick in my neck that left me unable to use my left hand -What is up with that-?! I was out of freezer meals, since I had planned on making them last week and there was no way I was dragging 3 kids to the store without being able to turn my head, much less grab them. Excuses? You betchya, I have armloads this week.
In the grand scheme of things, your family makes healthy decisions, as does mine, and THAT is the true message I try to deliver here at Home-Ec101.com.
Do I want food companies to do a better job of offering healthy choices? Absolutely.
I also want consumers to be better educated so they are aware of exactly what choices they are making.
I love seeing another family that does CORN. We usually end up with a soup created by the remains of the produce bin. Each time it is different and each time it is wonderful. My husband is a master at such things.

I love the acronym CORN! Seems like everyone has a version of this! Someone whose blog I visited last time (who was it?) called it "Find it, fix it" night. We call it foraging for food. Good concept, whatever you call it! 🙂
As for coleslaw, I just made this cabbage salad/slaw recipe again yesterday:http://littlestuffoflife.blogspot.com/2009/03/you… It's a little different than your traditional coleslaw, but pretty easy.
Your lentil pilaf looks awesome! I've been on the lookout for new lentil recipes, so I'm excited to try yours!

Busy weekend meant I was planning in the supermarket on Monday evening.

… and I've pinched one of your ideas Heather – I'm doing the "breakfast as supper" thing for our "Fright Night" (the night that we don't get home until 8pm, and only have 30secs at 6:30pm to run inside, grab something to eat and eat in the car)
Monday – Spinach & cheese ravioli with tomato sauce & falafel (instead of meatballs – I thought it would be different)
Tuesday – Same as Monday 😉 (It was a big box of pasta!)
Wednesday – Tofuparmiagana with broccoli
Thursday – Breakfast pies/pockets (I haven't decided yet – I'm going to mix egg, ham, cheese and peas (for green veg) and either stuff a pita with it; OR!!! make "tart shells" with Pillsbury Crescent dough, and fill them with uncooked eggs etc and bake into mini breakfast pies/quiches)
Friday – COFN 😉 (I have some leftovers in the freezer – stew/chilli etc)
