Before I get started on this week’s menu plan, I want to know:
What simple or “basic” recipe do you wish you’d been taught.
I’m planning out a tutorial calendar for the year and this will help me deal with that whole paradox of choice thing that I let turn into mental paralysis.
As always here is a printable to help you plan your meals and grocery shopping this week.
- Monday – Sweet Potato Skillet with Kale, Bacon, and Blue Cheese
- Tuesday – Pasta e Fagioli (with the wrong shape pasta, but it’s gluten free, so there’s really only so many choices)
- Wednesday – Chopped Salad with Grilled Chicken and Pineapple Vinaigrette
- Thursday – Chorizo Tacos, Cabbage Slaw, Refried Beans
- Friday – Tuna Cakes (kids request), Cheese Grits, Wilted Spinach
- Saturday – Clean Out Refrigerator Night (CORN)
- Sunday – Roast Chicken, Gravy, Balsamic Carrots, Rice and Peas

Sunday – tacos
Monday – beef and broccoli stir-fry with fried oodles
Tuesday – chilli con carne
Wednesday – butternut squash soup and deli meat sandwiches
Thursday – lasagne
Friday – salmon and roasted vegetables (potatoes, butternut squash, sweet potatoes, probably)
Saturday- spaghetti and meatballs
If any of those aren’t going to work out, then my fall back will be rice and beans.
I wish I’d known earlier how easy it is to make a cheap, healthy, yummy soup. I just puree roasted vegetables in stock/broth. I’ve gotten picky about it being homemade stock/broth, but in my college days this would have improved my diet and budget immensely, even if I’d used store-bought stock/broth.
Soup is a lifesaver here. We’ve had a really warm winter, so it hasn’t been as exciting to make, but it is my go to when I diverge from the plan.
I also meant to say, that I grew up reading Beverly Cleary and I can’t see chili con carne without thinking of Howie. (There’s some scene where it’s the only Spanish he knows)
Beverly Cleary – me too! AND my kids (boy, 8; girl, 6; boy 4) just got a boxed set of Ramona books for Christmas and they all love it. The 8-..o. has read each book twice already!

I do plan on covering all of the mother sauces over time as well as trinity and mirepoix. Understanding aromatics and how they can be the base for so many recipes.
