Hard to believe it, but Lent begins this week. I was raised Catholic and still follow some of the practices, even though they are not required by my current church. I’m sure many people can relate to finding peace or nostalgia in traditions. Pancake Tuesday is not practiced by everyone, in fact I never heard of it until the past few years, but it seems like a fun and fairly innocent way to celebrate Fat Tuesday. As a nursing mom, it would be unwise for me to fast, but there are other ways to observe this season.
Well, I probably revealed more than anyone wanted to know in this introduction, so on with the menu:
Monday | carmalized garlic chicken, confetti rice, green beans, Brussels sprouts |
Tuesday | pancakes, bacon, fruit |
Wednesday | root vegetable soup, corn bread |
Thursday | C.O.R.N.* |
Friday | salmon, broccoli/cabbage slaw with Asian dressing, vegetable fried rice |
Saturday | homemade pizza, raw vegetables with dip |
Sunday | lentil casserole, baked sweet potatoes |
*C.O.R.N. – Clean Out Refrigerator Night
Thanks for the link to the Carmalized Garlic Chicken…it sounds so yummy. Anything “carmelized” sounds good to me! lol!! And I love C.O.R.N….I have never heard it called that before! Neat!
